Play-Doh is just glorified salt clay, so I'd think any project you can make with salt clay would work for Play-Doh.
One thing I've heard about is people making Christmas tree ornaments by rolling the "clay" out, cutting out shapes with cookie cutters and poking a hole for hanging using a straw or pencil. After the ornament dries, it can be painted or otherwise decorated if desired.

I remember making a cute white mouse once. Complete with pink tail and nose, whiskers and all. My brother stepped on it!

you can hand model anything you like, and they also sell extruders, cutters and molds with various playdough sets.
