Slash and burn agriculture requires fewer resources. They leave the plot fallow for several years, which helps restore the soil's fertility. Farmers require education on the best crops to rotate to maintain the soil's fertility. If your just growing rice, it won't work.

3 things! first is economics they don't have other means to buy another crop. They used the seed harvested for planting in the next season. 2nd is it is already the practice of their elders lastly slash and burn saves their time than rooting it out.
