That's the problem with natual wood fireplaces. It's not easy to just leave them be. Even when they're dying out I've seen wood pop and shoot an ember out into the room.
I thought about a fire extinguisher, like one with a halogenated agent. But then I thought, that's proably not such a good idea because it could blow soot and hot embers everywhere.
I would think that water in a spray bottle could be used to slow things a bit, but as one other answer pointed out, you'd have to be careful not to "crack" the firebricks.
I suppose it's best to not light one unless you know someone will be around to tend to it. Growing up, we had a large family, so it was always very easy to get someone to keep an eye on it.
Good question though, made me think...

The idiot who said "use water" has never had a fireplace. NEVER use water; if any water hits the firebrick the sudden change in temperature could crack it.
You have a new fireplace so you have not learned yet. If you know you are leaving the house within a couple of hours, stop adding wood to the fire. If enough of the wood has burned many times you can poke it around enough to sort of kill it, but that's no guarantee. Usually when you move the pieces around the fire starts up again. So the best thing to do is just stop adding wood well in advance. Burning wood does not have an on/off switch.

wellll while it is not always advisable to leave a HUGE roaring fire it is possible to leave a small fire that is going out...I have never lived in a house w/o a fireplace and I have never NOT gone out because of a fire in the fireplace...that is what doors are for or the screen...good grief are you planning on staying awake every night waiting for the fire to die out completely...sorta takes the romance out of the picture does it not?

do not leave a fire unattended. that is one of the reasons that they are a pain in the a**, also the soot all over. unless you have an airtight lid you let it burn out. it is difficult to consider hosing down the livingroom fireplace. sorry but you must wait for it to go out to be safe.

you use the poker to spread out the coals. they wil go out pretty quickly, but that's assuming most of the wood has already been burnt. if you have a roaring, blazing fire, you can't really put it out. next time build fires when you are spending the evening at home.

I let my die out naturally...never close the damper till next morning tho...the house will stink and its not safe to do so anyway.
