well, mountains were important to different religions in China. the daoists' went to the mountains for religious reasons, the Buddhists carved Buddha's in the mountains, and many more other things happened in the mountains and involved the mountains than i can really explain to you here. to sum it up generically, nature is very important to Chinese art, and a lot of nature is found when one hikes up into the mountains. plus, their mountains are way different than the ones in N. America.

The Chinese word for mountain is Shan and the Hanzi looks like a three pronged pitch fork without a handle. There is no cultural significence other than that
