Disney's Polynesian Resort. My boyfriend and I always stay there. It's very tropical, the rooms are beautiful, and there are great views. Our favorite thing to do is relax on the patio outside of our room in the evening, with a gorgeous view of Cinderella Castle, and watch the Magic Kingdom fireworks, and just enjoy the warmth. Sometimes we go out on the beach and lay in the hammocks. It's so romantic! In the morning, take a short walk to the Disney's Grand Floridian Spa for a massage in the couple's room.

The Grand Floridian Resort and Spa at WaltDisneyWorld is probably your best bet. It's the best Disney resort suited for a romantic getaway. If you like, you can arrange to relax and go to the spa and get massages, etc. The three restaurants at Grand Floridian (Narcoosee's, Citricos and Victoria and Albert's) are all nice restaurants for a romantic dinner. Both Citricos and Narcoosee's have views of the Seven Seas Lagoon and the fireworks at Magic Kingdom. You can even arrange to have your hotel room look out on the lake. My fiance and I spent a weekend there and I proposed to her at the fountain in the courtyard, after dinner at Citricos. Also, don't forget, you can arrange to have flowers, champagne, and chocolate delivered to your room, through Disney floral. You can also buy champagne, wine and chocolates at the gift shop there in the resort too.

You may also want to consider booking a condo. These are complete with all of the amenities of home and a great place for a romantic weekend. You have a complete kitchen as well as washers and dryers. I was able to find a great condo at the Kissimmee/Orlando area on my online travel agency. I haven't been there yet, but everybody keeps telling me about this amazing hotel called Gaylord Palms. If your wife (girlfriend?) is into spas, they have a Canyon Ranch Spa... which my neighbor says is the best in town!
