These are done using CSS style sheets. The best way to find out how to do this would be to search google for flyout menus using CSS.

In most cases, those are paid text links. Basically, it's PPC that appears in the text or content of your site. If you are not interested in having those links appear on your site and get paid for it and are instead only interested in the code that makes those links appear when you hover over them, you'd want to research more on javascript.

They're made using CSS and Javascript tecnologies. The trick is to use unorder lists

    formate them using CSS and displays as you want (visual design). Then use Javascript to control their behavior (sub-elements you want to display or display them when user rolls over an element).

    There are great sites, which teach you how to make it, and offers you source code. It wouldn't be a bad idea to check out something else about CSS, Javascript, DOM.
