Given the upcoming season, she could write about all the things that squeak inside a haunted house. Could be old stairs, a broken door, spooky mice, ghosts going through walls? Could be fun.

While all of these are fabulous suggestions, allow her to walk around the house and explore. This will allow her to use her imagination as a creative outlet, and also provide a setting for the story or description (whatever the homework may be). By offering suggestions, this enables her to turn to you when she needs a little push. While helping her is applauded, allow her to try to come up with her own ideas to expand her creativity.

Well, I was going to say mice, but you have that idea already. I also thought of babies. I used to call my son "Squeaky" when he was a baby because of the little noises he made. Also, floors, certain toys, etc.
