The old man in this film is desperately trying to get this question answered, but he's skipped over. Leaving the audience, ie me, also skipped over. I want to know "what causes pippin' poultry?" I assume it is some kind of bacteria or smell, but who knows. I don't even know what the term "pippin' poultry" means. So while we're at it, "what is pippin' poultry?"

The actual question is, "What causes pip in poultry?"

Pip is a disease of birds, causing them to develop thick layers of mucous in their throat and mouths.

Critics of Hitchcock suggest that it's not the answer to the question that is important, but that it refers to birds. Birds are a recurrent theme in many of Hitchcock's movies as a harbinger of doom, and this one seems to be no exception!
