flat before you cook it? I usually beat chicken breasts so they cook more evenly. Should I do this before I marinate or after?

before, it helps it retain the marinade better, it also helps it cook better and faster so it does not get dried out, and you end up with a nice plump chicken breast when you get done

Poke it with a fork before marinating, usually.

I BEAT THE MEAT ALL THE TIME. I GETS THINGS GOING NICELY. BEAT THE MEAT BEFORE DIPPING INTO YOUR MARINADE, IT ALLOWS THE MEAT TO ABSORB BETTER AND WILL COOK UP NICELY.
