try having them compile a collection of butterflies or other insects and identify them and discuss some of their behaviors.
All you need to get started is a plastic container to capture the insects in, add a few drops of rubbing alcohol to dispatch them. then simply display them and use enature.com to identify them.
It just happens to be my favorite hobby. I find it very exciting to know that I can go out in my backyard and discover a creature that I never knew existed. Also some insects have very interesting behaviors.

I just graduated with my zoology degree and a project that we had to do (which was fun and informative) was make up an animal and have a model of it. It could be whatever we wanted the catch was that we had to have a logical reason for giving it everything we gave it, where it lived, what it ate, etc. For example, if you gave it a specific beak it was because the animal you created ate only seed from a specific tree in a certain region in a country. People really did extravagent things... it was a great project.

Well that depends largely on the age of student....kindergarden, make an animal paw print in clay by hand, draw slips of paper with animal types. Older like 3rd grade can make a plaster cast of their own pet's paw. H.S. kids could see how many beers it takes to get a dog drunk...lol..jk.... need to know what age group really

Ask them to create a model (drawing, clay...) of what the animal looks like, both genders, inside and out ( that's optional). Where it's found, what it eats, does it migrate, If it lays eggs, its scientific name, the list is endless. Right down types of animals on note cards and hand them out.

You could ask your students to make a poster showing evolution at work...for instance, the origins of various species....
