Actually they are Crepuscular, most active at dawn and dusk. They are prey animals, so the dawn and dusk is the safest time for them to be out foraging, daytime predators don't see them so well, and the night-time predators aren't out yet.
To clarify on a previous answer, they haven't been classified as rodents for quite a few years now, they are now classed as Lagamorphs, due to a number of unique features of their biology not present in most rodents.

predators like ourselves find it much easier to attack an eat an animal when we can see them. so rabbits have evolved to sleep in the day.
(the ones that come out in the day are easy pickings so never got a chance to reproduce)

So they don't get eaten. It's an instinct. They don't want to be visible and eating at night gives them more cover.
