My best hypothesis would be that the unstable composition of the laces causes their constant contraction and retraction while in a walking motion. This leads to a decay in the area centralized to the laces ability to retain a state of "tied"

Either that or freaky invisible goblins

Shoelaces can be untied manually or through the vibration of motion + gravity during strenuous activity.
