Even when I lived In Cajun country, I never quite got used to the food...lol. But, I'd really love a Western Omelet with a little salsa and sour cream on the side

* 8 large eggs - beaten
* 1/2 pound spicy sausage (usual one large link) - Andouille or Italian work great
* 1/3 cup sliced mushrooms
* 1/2 medium onion - diced
* 1/2 medium bell pepper - diced
* 1/4 cup green onions - chopped
* 1 jalapeno - chopped
* 2 Tablespoon milk

Sure you can me anything Cajun...for breakfast. Just tell me where and when and I will be there! Kansas doesn't have much to offer for Cajun. I also love to make breakfast home make hash browns, eggs, bacon, biscuts..yummy...now I am hungry!

I love Cajun breakfasts, but if you were to cook me something, it would have to be chicken fried steak, with hashbrowns, 3 eggs, and lots of country sausage gravy.

I'd like eggs, bacon, sausage, tomato, mushrooms, black pudding, hash browns, beans, fried bread and toast. With a dollop of HP sauce and a nice cup of tea. hmmmm.
