Black is preferred. But blue will work in a pinch. NEVER use another color - red, green, purple, etc.

When working with contracts, I always do everything in blue. This way, I can tell the original document from copies.

I once worked at a firm where they required everything to be done in black ink.

Realistically, it doesn't matter.
