Weasels are carnivores, so they eat other animals, as you appear to have guessed. They are often considered pests, because they will eat chickens and rabbits from commercial farms. In particular, the long-tailed weasel is the Western Hemisphere's most widespread carnivore. Its favorite prey are mice and voles, but it also takes rabbits, chipmunks, shrews, rats, birds, and poultry, and on rare occasions will also eat an insect or earthworm.

it may be rodents, such as mice or voles, or insects, depending on what wine they have left.
Insects really need a fruity white, while a gamey rodent, will be enhanced with a robust red, possibly a lighter beaujolais for a rabbit.
Weasels are notorious drinkers.
