For fantasy: All the David Eddings series especially The Belgariad and The Malloreon. Anything by David Gemmell. Also the "A song of Ice and Fire" series by George R.R. Martin. These books are all great and if you're looking for the best of the bunch check out Eddings first.
And for some good techno sci-fi check out Neal Stephenson's Cryptonomicon. Sci-fi label for this book is debatable but the author classifies it as such and it is a flat-out great read. Happy reading.

Anything by Jennifer Roberson. She has two series that are both wonderful. She also makes her stories excessable. You don't need to read the first to understand the middle or last books. Course, they are so good you'll want to read them all. Very good handling of magic, might and right.
And if your into Sci-fi, the 1632 series is so much fun and you might actually learn some valuable history. About a town from west virgina being accidently sent back in time to the 100 year war, town in all. Democracy was unheard of then. Women were property. The army's of europe roamed the continent killing and raping and destroying..... Course, they never heard of assault rifles, hand guns and how americans like to get into a fight.

For Sci Fi, check out William Gibson's body of work. He's the guy often credited with coining the phrases "cyberspace" and "cyberpunk."
