why are pigs pink?

Selective breeding. Customers prefer a pink or white rind to a black one. Black suggests decay, pink looks like fresh meat.
There are also black, white, and red pigs. But the large commercial farms keep the pink ones.
Sheep are white for the same reason. Wild pigs and sheep are most often brown. White ones appear after a couple of generations in captivity. They are preferred, especially aong leather producing farmers because you can dye white leather and wool.
White stock gets bred from and their offspring tend to be kept for breeding rather than eaten.

To the asker - Firstly, they aren't all pink - some are black, chestnut, brown or a mix. You might as well ask the same about human colouring - it is just down to the pigmentation we have. I don't think there is any specific evolutionary reason.

Skin/hair coat color is related to breed. The modern domesticated breeds we are most familiar with are pink, white, red, black, or black and white. The may be solid, have a stripe, or be piebald. Coloration and hair density in domesticated breeds is a result of selective breeding programs. The darker skin/hair coat of feral and wild swine allows them to blend into their surroundings and hide from predators (in this aspect the other answer is correct).

not all pigs are...some are black and some are white and some are even pink with black spots. Why are humans different colours??

They aren't all pink. Why do you think the large black is called that? Gloucester old spots are pink with black spots, some are ginger coloured and some are even tri coloured.
