Rock/sand has a lower specific heat capacity than water, therefore heats up quicker.
Also, where there is water, the latent heat of vaporisation cools the surface as the water evaporates.
Also, large land masses tend to get hotter because they are far from the sea (for the reasons above) So central USA, North Africa tend to be deserts. Whereas islands in the ocean tend to be jungle (cf Carribean)
