The key establishes the tonality of the piece. In the simplest terms, if it is minor, it sounds "sadder" and if it is major, it sounds "happier". As for g minor vs. c minor, that just helps to establish how low or high the piece goes. A song can be written in multiple keys to accomodate different voice types. Well, for instance, the difference between an E flat and the G minor is that the E is like a "common" or I could say "natural" note and the G minor is a G note played in a lower key (or pitch) than the normal G note. So the E flat is as how the name says, flat (or natural) and the G minor is a note with a modified key, which is a lower pitch.
Well, in music all the notes are called by letters, (the standard scale is C, D, E, F, G, A, B, C) and from that there's lots of modified keys and combinations for those notes. So the majors are notes played in a higher key and minors are notes in a lower key (also know as higher and lower pitch).
Well, you would understand it better if you study about music and also if you play an instrument (well, I hope this helps you).

they are chords, made up of at least 3 musical notes played together. E/flat has the notes E/flat, G & B/flat. Gminor is G, B/flat & D. also refers to the songs "key", meaning the dominant chord/scale of the music.
