Water molecules are polar and polar substances dissolve in each other because their opposite poles attract each other. Think of it as oil and vinegar: vinegar is polar but oil is not therefore they don't mix.

methanol and water are both polar. That means that they both have positive and negative ends. The other is nonpolar. Go by the rule "like dissolves like"
