All of these I would highly highly recommend to any lover of anime. Try Wikipedia.com if you want more info on them (or ask me, since I've seen all of them). Actually, I've only seen 1 or 2 of the anime you mentioned. ^_^

Elfen Lied is one of the best and only 13 episodes. Fate/Stay Night (I think is 26 episodes) is another favorite of mine. Blood+ OST is beautiful (50 episodes).

I just started on Innocent Venus and is very promising, only 9 episodes are out. This is a new series.

I would also recommend the following completed series: Noien, Read or Die, Witch hunter Robin. Cowboy Bebop, Last Exile, .Hack/sign, Wolf's rain....the list can go on.

Hunter x Hunter, or rather, I recommand the manga instead.

Karin (Cute romance comedy with a twist a vampire lore)

Excel Saga (I still have yet to meet someone who hate it)

FLCL (It's a hate or love it series =p )

I really don't recommand .hack//Legend of the Twilight, but .hack//Roots is interesting enough, if you don't mind slow pace/less action over art and music.

Ranma 1/2 (The creator of Inuyasha's previous work)

BTW, it's Rurouni Kenshin.

Outlaw Star, Sailor Moon, Magic Knight Rayearth, anything by Hayao Miyazaki ( all of his stuff is films though, not series), .Hack, Yu Yu Hakusho, Pretear, Digimon, Utena, Trigun.

Cowboy Bebop, only 26 episodes, plus one movie, and a couple of great OST's (Original Sound Tracks).

None of these anime with 500 episodes! Yikes, I don't have the time for that. I have a life to live.

...ok, here what i think you should watch.

Rorouni Kenshin (also called Samurai X, great kickass samurai story with alot of humor)

Wolfs Rain (four wolves insearch of paradise in a futuristic dieing world. I love the soundtrack.)

Hellsing (An organization fighting against vampires and ghouls. Alucard, a nosferatu, one of the most powerful vampires that exist serve Integra, the head of hellsing. lots of blood and gore...)

Love Hina (Just imagine putting a overly clumsy 21 year old guy in an all girls dormitory housing some violent, but really goreous ladies.... get the idea?)

GTO (Great Teacher Onizuka. A former motorcycle gang leader with a dream of becoming the greatest teacher in all of Japan. Expect some weird and utterly out of this world style of learning stuff.... now im thinking of being a teacher myself)

YuYu Hakusho (Trust me.... this one is a classic....)

Grappler Baki ( The son of the most power and deadly man in hand to hand combat is aspiring in defeating his father. dont watch this if your not into violence and gore)

Neon Genesis Evangelion (One of my all time favorites... great animation, great story, great everything... classic. Teenagers that pilot semi organic giant humanoid robots called evangelions. )

Card Captor Sakura (If youve watched Tsubasa chrincales, why not card captor? features most of the main character in tsubasa chronicles in thier younger years.)

Now and Then, Here and There (I dont know if the title is accurate. ive watched this a really long time ago and i was just captivated by the story... i was just like ... wow... its about a boy that is warped to a world, a really dry world in need of water. by girl that has water powers. the girl, Lalaru, iif im correct was then abducted forcing the boy embark on a journey to save her.)

well, thats about it... this is just my opinion ppl so dont kill me! hope ive helped you and enjoy!

Try The Law of Ueki. For me, it's really cool. Also, if you want baking, try Yakitate Japan. If you're a Book Worm, try R.O.D. (Read or Die) the TV. For fashion, Paradise Kiss (though it is somewhat for adults). Also try, Flame of Recca (Honou no Recca), Vision of Escaflowne, Trigun and God Save our King.
