The new copper pipes will not give you milky water. It could be one of two things. As someone mentioned earlier it could be air in your pipes does it make a funny noise as it comes out of the tap? If so this is it. Second it could be actually coming from your hot water tank or water pressure tank that is sediment that was stired up when the pipes were changed. Most likely it will clear up in a day or two.

It could be just air bubbles, does the water smell?

That's not good. You are going to have to get the plumber to resolve this or take them to court over it. they did a botch job. They will probably fix it if you are polite about it, but don't let them brush you off.

depends did they use water soluble flux.don't worry it will clear up.
