At what stages is laryngitis contagious?

Is it true that it's only contagious the first day or so?

laryngitis is a symptom, not a disease process. It can be caused by infection, or by screaming at a rock concert for four or five hours. All it means is inflammation of the larynx.
If you develop laryngitis, fever, cough etc. You are infectious until you no longer have symptoms for 24 hours. If you only develop laryngitis, no other symptoms then it is likely due to post nasal drip from allergies, or as I said from using your voice too much and too loud.
