true bald heads no shaved heads depends on resturants or the helth codes in an area some health departments will state all cooks wull wear some kind of head gear while cooking that will trap possible hair and or sweat (people do sweat when over a hot stove)
some restaurants will even have the men wear a chin gaurd if they have a beard or goatee or request that all cooks are clean shaven is mostly the later

Most likely becuase 1. it is part of the uniform and 2. a piece of flaking dead skin could fall off into the food.

not hair nets but do-rags to keep the sweat from dripping down into your food...find a bald chef with no do-rag and you have sweat in your food.

They do need something to contain the body fluids, like sweat.
