According to my understanding, God gave mankind "free will", the ability to make choices in any circumstance. God does "know everything" this is called omniscient. He knows all the permutations of all the choices that all of humanity may make, but he does not know which choices that mankind will actually make. This means that God has prepared a plan with every contingency for all of the choices to eventually get mankind to the place where he intends for it to be. God was not pleased with the choices mankind had made and so he decided to destroy all but Noah and his family and let mankind start over. This is slightly different from saying that God made a mistake.

cuz i am sure he know what i'll exactilly choose
not just know evry possible choice to me

Jehovah knows everything that he wishes to know. By restricting His own foreknowledge of the possible mistakes of His creatures, Jehovah's perfect love can still allows the free will of His creatures to result in painful mistakes.

Jehovah's actions are never regretful, but man's actions often are.

There is no freewill! A person will make the choices he does because, although he may have had many choices, only one is the choice he could and did make. He is wired that way through many eons of evolution. While there may have appeared to be choices, in reality, for him there was only one.

Both gods did it wrong. The evidence is all around us. They screwed up big time. We need to find a god that won't mess things up like this for the whole world.
