If you are referring to the actual "fog" that the defroster dissipates, the only thing that will stop it is to stop breathing in the car.
If you are referring to the sort of "greasy" residue on the inside that causes glare and makes the Windows look dirty, it is caused by the "gassing" of the hydrocarbons in the plastics that make up the inside of your car, like the dashboard, and the upholstery.
The best thing you can do to reduce it is to leave the side windows cracked open just a very little bit when you park. Also very helpful is to use one of those windshield sun-screens that help keep the car cooler. If you use it, then the "gassing" will collect on the screen, and you won't have to clean the windshield as often.
ALSO, don't use ARMOR-ALL inside your car. This contains silicone in a solvent, and when heated will also collect on the inside of the glass.
Good Luck

This is most likely because your heater core is leaking causing antifreeze to be mixed with the air blowing out your vents. It leaves an oily film on the windows and they get all fogged up. Have it checked at a reputable auto repair shop.

all cars fog up especially older cars..if the inside of the screen is really wet in the morning you have a water leak in the car you might not notice any wet carpet as it is usually the under lay that gets soaking wet first and this dampness causes excessive fogging..or if you live a lot of bottles of water or the like in the car can cause the same problem!!!!
If your carpet and underlay isn't soaking wet then try and get a dehumidifier from someone and put it in your car over the weekend or as long as you can this will completely dry it and you will soon know if you have damp car!!!

is the film mainly on the windshield? If so then you most likely have a bad heater core...when you turn the defroster on a bad heater core will allow a certain amount of antifreeze to escape and it will develope a nasty film on the windshield.

Don't you have a defrost? You can drive around with the air condition on but put your temp to hot. So your not freezing. It's just condensation. Good luck!
