You have to remember that shepherds have to watch because the sheep are not in enclosed fields. So, sheep being extremely stupid, if one gets the idea to wander off, chances quite a few of them will follow on. Plus there's the danger of predators and thieves, and bogs, cliffs, rivers and ponds for them to fall into.

So the sheep don't wander off? Is there perhaps something else you mean with this? Otherwise yeah sometimes a sheep just gets it into it's mind hey wonder what's over there or something like that and just starts going off on its own. Well one alone is a shame to lose BUT the thing is sheep follow. So one goes and the rest are likely to follow. So if the Shepard isn't paying attention all the rest will go. So they have to watch their herd and make sure none go off. That is why you hear of sheep dogs as well. They are dogs that watch over heards now. Make sure none try to wonder off and if one does they are trained to get them back where they belong, can't think of the right wording.

So the flocks of sheep don't run off out of confusion. There is an excellent parable about this in the Bible where a shepherd is in charge of 100 sheep and one of them escapes. The shepherd looks high and low and finds the poor little sheep hiding in a crevice.

MORAL OF THE STORY: Christ is the shepherd and we are the sheep.

Shepherds have to watch sheep to keep them from wandering off and also to protect them from predators.

This is especially important when the ewes are lambing.
