A friend once told me that the color yellow is representative of an idea coming forth. If one looks at a yellow post-it, the hopes might be that a 'lightswitch' will go on in the brain. Thereforth this thought will go into motion.

Bright color - stands out and gets your attention, which is the whole purpose of the post it note.
One of the previous is right, though - they are available in a number of other colors now. Some are much brighter (neon yellow, neon pink, etc.) and some are more subdued (grey, slate blue, etc.). Something for everyone! :o)

Because it stands out on white paper, but it is still easy to read blue and black ink. Especially blue, as blue and yellow are opposites from a visual perspective.
