mess with a skunk, you get sprayed and wind up smelling worse than when you started messing with it
mess with a mule, you'll get kicked in the face
mess with a drunk then you are an idiot as arguing with a drunk is like testing an outlet by jamming a fork into it.

You'd have to be pretty foolish to argue with a skunk because you'll end up stinking as bad as they do. You'd also have to be pretty foolish to argue with an *** (mule). And arguing with a drunk is pointless because they aren't of sound mind or body, and they won't remember the outcome of the argument in the morning.

The saying refers to the fruitlessness of doing any of the three, usually placing the actual object of the remark at the end for emphasis (i.e. if you were arguing with a drunk, you would cite it as a way to say that arguing with them would be the same as arguing with a skunk (the consequence of which would be merely to make a big stink), or a donkey (which is a metaphor for unreasoned stubbornness).
