Keeping on top of e-mail - reading, replying, filing and deleting.

From a personal standpoint, it would be creating file folders, deleting, reviewing etc.
From a broader standpoint it refers to Spam filtering (what even gets through to people), monitoring traffic patterns (when the bulk of mail goes in or out and assuring the systems can handle it ) backups/retention/archiving (cleaning off the system for realtime access to help server volume, but saving copies for future restores if ever needed for legal or business purposes). I could go on, but that's the basics.

Depends on whether you're talking about managing your own e-mail box, or you're talking about what the network/system administrator(s) do to manage the e-mail server, or whether you're talking about the systems themselves that handle packets of information across a network.
