NEVER EVER get well done, go with medium, beef does not have to be cooked all the way through unless its hamburger

medium rare, always let your beef rest about 10 mins covered with foil,after being rmoved from the heat, it will help redistribute the juices so they dont run out of your meat, as well as it will continue to slighty cook also.
