i purchased a hotel.which was very popular but closed due to not having good kitchen staff.now i purchased it & redecorate it.i also give extensive advertise in the local news paper, which include a copune for a free sweet dish with the purchase of dinner.
i also offered a more varied menu.
so what should i do & the money spent on the extensive advertising does not recover.

You might consider offering things for free...like to the people staying in the hotel--a free meal such as breakfast with any overnight stay...

Or throw a party where people can come and sample the food. This way, you can run an ad stating that there is a party -- and just leave it at that. I can almost hear the phones ringing now for you...

Whatever u have spent is not a wastage, that will surely lead you, but take care of the thing that u r not using again that kitchen staff, i mean, don't throw them out but try to improve it by involving yourself among them, not everytime but whenever u get time. Your idea of varied menu and is much better but take care of its regularity, it must not be the case that a dish u having in your menu card is not available when the costumer ask for to u.
Even your idea of free sweet dish is also good, that will make your costumers satisfied even if the dinner doesn't taste well.

Are you using back those bad kitchen staff?
Recommendation is very important in F&B biz.
Try spreading rumor that you're the best place to eat, hangout etc. Get some magazine or papers to run reviews.

the best publicity you could have is word of mouth impress your customers and you dont need to advertise put on a good show and your hotel will thrive. good luck.
