Many scientists say that a meteor struck the earth and knocked a huge chunk out the other side and into space, or knocked a bunch of dirt and lava out into space where it eventually formed one big mass...the moon.

Popular theory is that a huge asteroid collided with Earth when the planet was still forming, took a good chunk off, added that mass, and became our moon. That's why it's so big in comparison to other terrestrial moons (they normally wouldn't form that large). Apparently you can find elements and minerals and things that should only be on Earth on our moon (which is a clear indicator that there was some collision in the beginning).

Some scientists say that in the early stages of Earth's formation the Earth was hit with something that caused a piece of the earth to break off and form the moon.

There are various theories, but studies of moon rock samples over the last few decades have favoured one particular theory, ie that the moon is composed of mantle and crust matter (not core) ejected into space from the early Earth by a major impact. There are still a lot of uncertainties and gaps in this theory, but it is the one that is most consistent with what we know so far. Take a look at this link:

Popular belief is that that Earth's sister planet (which was of similar size to Earth and occupied the same orbit as the Earth) crashed into the Earth while they were still cooling, and the resulting debris formed the moon.

You may want to ask the Creator, because i think it's beyond human conception.
Scientists will only speculate about it.
