Once deleted - they are gone for good I'm afraid. The phone company may have a record of which number an incoming text came from and the time/date etc. try calling customer services of your service provider.

There is some software that claims to be able to recover data from the simm. Not cheap though, so guess it depends how important the message is!

Never used it and have no idea if it works - guess may depend how many other messages you have received since you deleted it.

Actually (believe it or not), it is possible. But the software on most (if not all) doesn't not allow you to access the 'trashcan' on your phone.
The very same is possible for any other data that may have been stored on other medium (such as a SIM card).
Very few developers have access (licenses) to use that kind of software. Data repair labs do have them but it costs a good bundle to have them do it... and you'd need written consent from the party involved, plus the authorities.

you can ring what ever mobile company you are with and they will have a copie of all the messages sent to you are that you have sent. I an with O2 and i needed them for a court case.
