You could document the impact that the invention of movable type had on literacy and education, and how this brought about the social changes that ended the feudal societies of that era.
What about the impact of the Reformation on religion and politics? Luther also impacted the economy in many ways.
You have a lot to work with. The introduction of gunpowder and its effects on military science also had a great impact on medieval society.
This was also the beginning of the end of the almost universally accepted institution of slavery.
