I believe it's ...the "fight or flight" reaction. When we feel fear or whatever makes one nervous,the human being is "wired" to fight the "enemy" or if the enemy is way to big..then "flight" run..

We don't do that much anymore. too "sophisticated now" so we end up with "hearts pounding" "shaking" and more.

Hand shake is a non verbal communiation that tell us about emotions of the person towhom we hand shake. It represents nervous when some just limp or shake hand many times.
