After copying from Wikipedia, in MS-Word go to the Edit menu and choose Paste Special. Then paste as Formatted Text to keep the links or as Unformatted Text to paste without the links.

Of course, you might want to do some rewriting even if you do remove the background. The teachers have an uncanny ability to detect sections lifted from Wikipedia and snag you for plagarism. There are plenty of ways for them to catch you at it, and they are pretty familiar with Wikipedia- since that's the site most students use.

When you have pasted the text as normal, select it.
From the Format menu choose Borders and Shading.
Click on the Shading tab if it is not to the front.
Under Fill, click on No Fill.
Click OK
This will take out the blue background.
