Tambourine Mountain.
Take the turn off at Oxenford.
It has beautiful national parks, as does Springbrook.
But if you are looking for fun, I suggest Surfers Paradise. It has plenty of clubs and restaurants, and a place where you can go on the bungee rocket right in the middle of town.
The beaches are not the best in surfers, but much better at Burleigh heads, where you can surf, sun yourself and watch the world go by. If you do go to burleigh,try Busy Bee for (seriously) the nicest fish and chips on the coast!!
Don't stay in Labrador, on Frank street. It's the main street that runs up the coast through Labrador. The street does have a lot of inexpensive accommodation, but is a pretty bad area. (lotta winos ect)
Pacific Fair in Broadbeach is great for shopping, as is Australia Fair in Southport.

Steve Irwin's Zoo... Australia Zoo is located on the beautiful Sunshine Coast near the Glasshouse Mountains. Just 45 minutes north of Brisbane on the Glasshouse Mountains Tourist Drive, it is the home of some of Australia's most unique and amazing wildlife, as well as some remarkable animals from overseas.

Try a drive up to Mt.Glorious via the sleepy township of Samford, or a night cruise on a paddle steamer from Brisbane city to the river mouth, or a day/evening boat trip to Tangalooma on Moreton Island to feed the dolphins.
Also try to include a visit to the Gold coast hinterland via either Currumbin or Tallebudgera valley.

If you are prepared to drive to the Sunshine Coast, then hiring a four wheel drive and driving along Rainbow Beach to see the coloured sands is a great day out. You could also visit the wreck or what is left of it of the Cherry Venture. And for an excellent day take the ferry to Fraser Island and go four wheeling their. It's great place with walks and natural ice cold streams to swim in.
If you are in to craft shops Montville is the place to go as they have so many interesting little shops.

Definitely travel the extra hour to The Sunshine Coast, I am not that sure about what there is to there , but , up here we have Australia Zoo, Underwater world at Mooloolaba, The Ettamogah Pub, The Glasshouse Mountains, beautiful beaches and heaps more as well as lovely people.

I was up in the Gold Coast two weeks ago. I went to Seaworld which I really loved. It was a great day out. It's also very close to Surfers Paradise which is a cool place to chill out on the beach. (I know you said apart from theme parks but I loved Seaworld)

A must see is the Lamington National Park .
feed wild parrots or enjoy rain forest walks . Its about an hour out of the Gold Coast I will put some pictures in an album on my 360

I like the Lone Pine Koala Sanctuary. You can actually hold the koalas, feed kangaroos... it's a wonderful experience. It's not difficult to get to from the centre of Brisbane (only 11km away)... just ask about it any visitors information desk. There's quite a few of them around, and any could tell you how to get a tour bus there, or how to make your own way via public transport.
