Exactly one girl or at least one girl?

Exactly one girl means that you want one girl (1/2 probability) and seven boys (1/2 ^ 7 probability), but there are 8 different ways to order this. So the answer is (1/2)^8 * 8 = 1/32. Kinda small but not impossible.

The simplest way to do at least one girl is "not entirely boys". Entirely boys would be 1/2 ^ 8, so not entirely boys is 1 - 1/2^8 = 255/256. This is an extremely high probability, because the chances of having no girls in 8 pregnancies is exceedingly small.
