Depends upon what you mean by famous.

Horses by David Ferry who teaches at Weslyan and has published two books.

Lots of Cowboy/Cowgirl Poetry available by various authors.

In music Shakira "Poem to a Horse" and Patti Smith "Horses".

The Poetry of Horses by Samuel Carr available at Alibris.com

Ed Ochester's new book is SNOW WHITE HORSES: SELECTED POEMS, but I don't know if there is actually a poem about horses in it. Published by Autumn House Press.

Billy Collins, our poet laureat, has a book entitled Nine Horses.
