I would start with the source: the Vince Guaraldi Trio composed and performed the Charlie Brown Christmas album (which I assume you already have). Here is a link to his Greatest Hits CD: http://www.amazon.com/Vince-Guaraldi-Greatest-Hits/dp/B000000XD9/sr=1-1/qid=1160543491/ref=pd_bbs_1/104-6689715-7532719?ie=UTF8&s=music

Dave Brubeck's "Take 5" from his TIME OUT CD has a recognizable theme lots of piano and is from the same era.

I would also recommend some of Dave Grusin's movie theme music http://www.amazon.com/Now-Playing-Movie-Themes-Piano/dp/B00028X26Y/sr=1-2/qid=1160543449/ref=pd_bbs_2/104-6689715-7532719?ie=UTF8&s=music

There are snippits available on all these links! Hope this helps!

John Tesh. From Entertainment Tonight. He married Connie Selleca. An excellent pianist!
I think he's even played the Charlie Brown theme song.

So many good jazz trios featuring the piano...
Maybe take a look at this one:

Bill Evans Trio - Portraits in Jazz

He plays really beautifully.
