I found holly and elder to be associated with her, but was there a Nordic symbol for her?

Her symbol is Hagalaz,hail, as in frozen water and icy air

Another Nordic rune, ur or uruz means strength or sacrificial animals. In Clive Barrett's system of Norse Tarot, it refers to the card of Strength, taking inspiration from the myth of Loki and Angurboda and their three monstrous offspring: Hel, goddess of the Underworld; Iormungandr, the Great Serpent; and Fenris, the wolf. The story of Fenris involves ferocious growth, betrayal by the gods, and the biting off of the hand of Tyr, god of war.

Godess Hel, in Scandinavian mythology, the goddess of the dead. She dwelt beneath one of the three roots of the sacred ash tree Yggdrasil and was the daughter of Loki, the spirit of mischief or evil, and the giantess Angerbotha (Angerboda). Odin, chief of the gods, put Hel in charge of Niflheim, the realm of cold and darkness, itself also known as Hel. Later, Christianized interpretations of Hel (both the goddess and her realm) mistakenly, if understandably, saw the Scandinavian underworld as a place of punishment resembling Hell; in fact, the dead were apparently welcomed to a peaceful life there.

Asatru friends of mine represent her with a circle, half white and half black (in reference to her body/face) surrounded by elderberries. I don't know if this is part of an older tradition, but it seems to work for them.
