In an expirement, the independent variable is that which you have control over. It is the variable that you change to effect an outcome. The dependent variable is the one which you will observe for change.
In this expirement, it seems that you are looking at heart rate and blood pressure. These would be the dependent variables. The independent variables are the things you are having the students do to effect a change in the heart rate and blood pressured, i.e. jumping jacks and nap.
The easiest way to remember it is that the dependent variable depends on the conditions of the expirement, wich contain the independent vairables.

The independent variable is "amount of exercise", which has two levels in this experiment 1. jumping jacks, 2. naps (no exercise). The dependent variable is the heart rate and blood pressure. This is a between-subjects design because each person did only one thing (i.e. you didn't measure all people both resting and exercising).
How do you know? the easy way is...the dependent variable is the thing you measure i.e. heart rate and blood pressure.
The independent variable is the thing you manipulate, i.e. the amount of exercise.

The only variables involved would be that the heart rate of the people excercising would be higher than the heart rate of those resting.
I think you need to post more information to get the answer you need.
