Well I think I'd shoot for something that may well be physically impossible in reality.
Wouldn't it be cook to do a simulation of flying with no mechanical help? Surely the computer could cook that up for me.
I can think of a few erotic things that border wierd fetishes too, but I don't know if I would want my "first" experience to be something sexual. Afterall, with as much "web site" spying we have today, I am sure the Captain gets the report for all holodeck use.

If this is going to be an official Star Trek Holodeck Fantasy it has to include Counselor Troy and her home planet on which clothing is not necessary, and; the fans were promised that sight at her wedding to Will Ryker. 86 Will and you have a fantasy including a honeymoon that would make video history.

My first choice would be to be with jennifer Garner in one of her ALIAS episodes, where she dresses up in various undercover costumes. (only x rated parts as well).
My second choice would be to experience the same feeling I get when I dream that I am flying. Soar over terrain, mountains, beaches, etc.
Third choice would be to be able to dance (I have always wanted to dance, and never had the rythm) that is why my brother and I became the DJ's.

Michelle Yeoh (Asian), Angelina Jolie and Me. For a little International relations. However, this is only a fantasy since neither one can replace my wife in my eyes.

My fantasy would take place during the Roaring Twenties and I would be dressed as a flapper in some speakeasy living it up.

I live so far from home (and space would be even further) that I would program a scenario of my home, and I would relax and breathe deeply for the first time in years.

It is autumn in the elven forest - an ever-lasting autumn set in the time of the Silmarilion. Great grey-barked trees tower up to misty heights, their roots dramatic buttresses and arches rising from rich green moss soft as cat's fur. Here and there amid the golden leaves are tucked balconies, platforms, sleeping nests of greyed wood. The winding stairs by which they are accessed seem not so much cut as sculpted or grown like natural protrusions from the living tree.
Now - evening sweeps down, lavish with pink and peach in the sky, then gentles to dusky purples. Glimmering birds, hazy with faint light like huge fireflies, drift about between the branches and settle themselves on balcony rails.
I am a human bard, my heart tremulous with need and a half-envious yearning as I hear the singing of the elves in their bowers. The minor harmonies chime like shaken stars, resonate as deeply as the tree roots, pluck plangently at the strings of emotion. She-elves have come, graceful and unspeaking, to dress my dark hair into a cloud about my shoulders, drape me in elven robes, set aril-gems in my ears.
Now I step down the spiral of grey-bark stairs, my lapharp cradled in one arm. He will come to meet me, there in the trees, where the stone hearth rises between two hung banners of autumnal leaves.
Firelight warms the polished flagging underfoot, flickers across the moss between each stone, sets a glint of light dancing from elf-blond hair. A cheekbone seems as sculpted as the stairways, sharp as the pillars which frame this leafy hall. Though the planes of his mouth deserve a song to themselves, I watch his eyes as he steps towards me. They spark, fill, dance like the fire, taut with all the desire his race is said to never show to a mortal.
I stoop to set my harp upon the flags - gentle, gentle - yet the sharp click of wood on stone betrays me as much as my less- schooled face, as much as the careful haste in which his bow is unstrung and set aside betrays him.
Light-footed my lover comes, Legolas comes to me.
