I'm so happy to hear that you've noticed. The real question is "why are there so many Jewish scientists?" and it's because of a history and tradition of Jewish educational values. Education and real careers are stressed and valued. If they were among any other group of people, many of them would be great scientists too -- as an example, I offer Japan.

Without having any statistics to base this on, I think that judaism is the religion where the average person has the highest level of formal education. I think one reason is that most jewish people live in countries where they get the opportunity to study. Many christians in Africa, or people of hindu or islam faith in Asia, are not as fortunate.
Maybe it's also part of the jewish tradition to value education, meaning parents encourage their children to study?

Jewish people place a very high value on education & learning; they prize scholarship & academic achievement & there is no religious impediment to their success in this area; the result has been extraordinary brilliance in many fields, especially the sciences. Jewish contributions to the world have been great out of proportion to their numbers.
To ascribe their achievements to anything but perseverence & a lot of hard studying does them a disservice, & denigrates the value of the benefit they have done for the rest of the world.

Jewish people tend to be very educated and very successful people. The fact that a lot of them are Nobel winners is not suprising. I don't think it has anything to do with them being 'chosen people' or whatever, but far more to do with the fact that they are intelligent, hard working people.

Even though they rejected Christ, mainly because of the scribes, they have lived pretty decent lives through the ages and adhered to God's laws, for the most part.
I'll go a little deeper. The United States became the greatest nation on Earth for the same reason, being aligned with God's ways and having good laws based upon his principles.
You can just see the little punks (liberal Socalists) attacking people in the religion section, and their goal is to do away with God and religion in America and make us one nation apart from God. Well, I won't go on about this, but you can see my point.

Jewish boys aren't recognised as men until they pass their "Bar Mitzvah" at about age 14. To pass it, they have to learn and remember things. I expect girls have something similar. Therefore, relatively more Jews grow up with the habit of study and learning.
Roman Catholic children have to learn and remember a few simple Biblical things so as to take their "First Communion" at about age 8, but that's much less demanding.

To understand where the Jewish people are coming from, you need to understand the Jewish journey through history.
