A perl stitch is opposite from a straight knit stitch. In an knit stitch you bring your needle up through the loop on the row you are working, then bring your yarn around etc. On a perl you bring your needle down through the loop you are working then continue the stitch by bringing your yarn around and through.

The combination of knit one perl one in the first row THEN perl one knit one in the next etc. makes a stocking stitch pattern. Like the cuffs on mittens or the cuff edge of a sweater.
