Demographics are the statistical data for a population or population segment. You may see some statistics listing the demographics of a city: average age of residents, income, education level, race, male to female ratio, ethnic origin, etc.
So for your day care project, are you looking for the demographics of the children? Of the childrens family/parents? Of the city in which the day care exists?

A demographic is what kind of people live in the area. What's their race? What is the average income? Are most people on welfare? What kind of education does the average person have? What kind of job - white collar, blue collar, executive, small business owner?
