Because ultimate power corrupts ultimately! When just a few people or even just ONE person holds a huge amount of power, it often leads to corruption, greed, and short-sightedness in leadership. Dictatorships and monarchy are prime examples of this. When power is spread between many branches of government, any idea under consideration gets lots of attention and input from many different people. This also prevents a government from doing anything it pleases - there are too many people watching.

They seperate powers so that one group couldn't take control. One branch had a set of powers, and if they started abusing that power, the other branches could "check" them.
