your not hearing silence. you are hearing the noise that you naturally produce from the very slight movement of your ear drum on it's own. you don't normally hear this because other things are much louder.
and analogy for this is if you stand 500 metres away with a tiny light you cannot see it in the day but you can at night when there is other light interfering with what your seeing

I seem to remember reading in a book about acoustics that if you sat in an anechoic chamber (sound proofed room) and waited a while, you should be able to hear the molecular vibrations of the gas in the atmosphere. This suggests that there is no such thing as total silence and that the ear is extremely sensitive.
Hmmmm.

I suppose since silence is the absence of noise and strictly speaking you can only hear a noise the straightforward answer is no.

Not a particularly spiritual or philosophical answer I fear.

Simon and Garfunkle have a song about it though; The Sound of Silence. Not sure how credible knowing that makes me..

First of all tell me first or describe the sound of silence.Anyway, without any sound perception makes the silence. To hear means to receive sound perception. But I can say that silence is more "deafening" than any other sort of loud sounds. If you have good experience on this you may agree.♥

Is this like the question "If a tree falls in the woods & there's no one there to hear it, does it make a sound?" or is it like the song, "The sound of silence?"

Absolutely!
I listen to silence for at least 1 hour a day.

The mysteries of the universe are only mysteries to a noisy mind. Silence is the veil of God.

there is no complete silence,
as long as things and material exist then there is motion and vibration,
but you can only hear the frequencies that your ear is designed to respond to, the intensity of this vibration can be very small or high, just like the intensity of light; it can be high (bright) or low (dim),
in what is so called silence, you can hear sounds that existed all the time but we never heard them because they where over masked by high intensity sounds.
