FUS is correct, I fitted one today, though I've fitted hundreds before. You don't need to drain down. The stat is in a pocket. There are 3 lengths of thermostat 7/11/18 inches, take out the old one first and get one the same length. Make sure that its a updated stat, it should have a cut out button since about 2 years ago, (A new regulation)

No . The thermostat is in a sleeve, so all you do is switch off the immersion heater disconnect the two connections and withdraw the old 'stat and put the new one in, make sure you set it to the same temperature as the old one. That's that.
The others replying to this are talking about the heater itself.

Turn off the immersion at the fuse box, Remove cover plate disconnect the stat using a good electrical screwdriver, Remove from sleeve and replace with same type.
NO NEED TO DRAIN DOWN ANYTHING

No need to drain the tank.
I've done this before.
Just isolate the electrical supply to the heater.
You will need a big spanner to take the immersion heater out of the tank.
Its plain sailing.
A bit of water might spill form the top but nothing to worry about!

be on the safe side -drain the tank first do not over tighten the new one and don't forget to turn the electric off

NO JUST TURN WATER OFF BEFORE STARTING THE JOB RUN HOT WATER TAP TO ALLOW SOME WATER OUT.
THEN UNSCREW THE THERMASTAT.REVERSE TO FIT.
